Australian Food Recipe: Lamingtons
Take an average vanilla-flavored cake, cut it into squares, drench them in chocolate icing and cover them with shredded coconut and what's the result? Lamingtons.
Ingredients:
5 eggs
200g caster sugar
70g plain flour
70g self-raising flour
70g cornflour
250g icing sugar
50g cocoa powder
150ml boiling water
100g raspberry jam (jelly)
250g desiccated coconut
1. Preheat the over to 160 degrees C.
2. Lightly grease a 30cm x 20 cm cake tin with butter. Line the tin with baking paper.
3. Mix eggs and caster sugar in a kitchen mixer for 3-4 minutes until light and fluffy.
4. Sieve the flours and cornflour into the mixture and fold.
5. Pour mixture into lined cake tin and bake for 20 minutes.
6. Test with skewer, then remove from oven and leave to cool in tin for 1 hour.
7. Prepare chocolate by mixing icing sugar, cocoa and boiling water in bowl.
8. Remove cake from tin, cut in half horizontally and spread strawberry jam over bottom half. Replace top half to make sandwich.
9. Cut cake into squares and dip each square into chocolate mixture. Cover lightly with desiccated coconut.
Serves 30.
