Chicken with Black Bean Sauce



When I was growing up this was served in Chinese restaurants and is still one of it's staple items on the menu.


Chicken with Black bean Sauce


Ingredients:

2 Chicken Breasts, chopped into 1cm cubes
1/2 x 230g can sliced bamboo shoots, drained
1 tbsp black beans, finely chopped
4 cloves of garlic
1 small red pepper, chopped
1 small green pepper, chopped
1 cm piece green ginger
2 tsp cornflour
1/2 tsp sugar
1/4 tsp sesame oil
1 tbsp oil
1 onion, sliced
2 tsp soy sauce
2 tbsp oil, extra

Sauce:
1 tsp soy sauce
1 tsp cornflour
1/4 tsp sugar
1/4 cup chicken stock


1. Place in a bowl, the chicken, sesame oil, soy sauce, sugar and cornflour and mix together. Place in the fridge for thirty minutes.

2. In another bowl, place the black beans with garlic and ginger. Blend ingredients for sauce together.

3. Heat oil in a pan, add onion, cook for 1 minute. Then add the peppers and bamboo shoots and stir fry for 1 minute, remove from pan.

4. Add extra oil to pan and add bean mixture and stir fry for 10 seconds. Then add chicken and stir fry for 5 minutes until cooked through. Then add the sauce and vegetable mixture and stir fry until hot.
