Quiche Lorraine


For better or worse, most people think of pasta when they think of Italian food. The versatility of this simple wheat concoction has made it extremely popular wherever Italian immigrants have settled, as well as in its country of origin. You can mix pasta with absolutely anything and pretty well guarantee you'll create a tasty dish.

Here is one recipe for this popular dish.

Ingredients:

Filler:
2 eggs lightly beaten
1 cup boiled ham
1 cup shredded cheese
1 (13 oz) can evaporated milk
2 tsp parsley flakes
½ tsp salt
pinch of cayenne pepper

Pastry:
½ cup sifted flour
½ tsp baking powder
¼ tsp salt
¼ tsp margarine or butter


Pastry Instructions
1. Mix dry ingredients in a bowl.
2. Add margarine and mix thoroughly.
3. Form into a ball and place in 9 inch pie dish.
4. Mold pastry to fit pie dish.

Filler Instructions
1. Place eggs and evaporated milk into a large bowl.
2. Mix thoroughly, then add salt, pepper, ham and cheese.
3. Pour into pie dish.
4. Sprinkle parsley flakes on top.

Bake in moderate oven at 400 degrees Fahrenheit (187 degrees centigrade) for 10 minutes.
Turn down temperature to 300 degrees Fahrenheit (175 degrees centigrade) and cook for additional 20 minutes.

Serves 4-8


SUBSTITUTIONS

Tuna And Onion Quiche
Substitute 1 can of tuna for ham. Add I chopped onion (lightly sautéed if desired).

Mushroom and Onion Quiche
Substitute 2 cups sliced mushrooms for ham. Add I chopped onion.

Experiment with any combination of additional ingredients you wish. It all tastes great.
