You will find countless versions of this marvelous dish, which consists of herbed rice, pork, chicken, and shellfish. According to legend, it was brought to Spain by the Moors and quickly adopted by all Mediterranean countries. Inventive chefs vary the basic recipe to suit their own tastes, and you can do the same. Paella makes a great buffet supper dish, served with a green salad and hot buttered French bread.


1/4 cup olive or salad oil
2 medium onions, chopped
1 clove garlic, minced
2 cups long grain white rice
teaspoon saffron
3 cups hot chicken broth
4 slices bacon, partially cooked and cut into small strips
1 16-ounce can tomatoes
1 2-ounce jar pimientos, sliced
1/4 cup chopped green bell pepper
1pound halibut, red snapper, or mahi mahi, cut into bite-sized chunks
1 pound shrimp, cooked, peeled, and deveined
1 teaspoon salt
teaspoon oregano
teaspoon tarragon
3 whole chicken breasts, cut in half, browned and cooked
6 raw shrimp, shelled and deveined
12 raw clams in the shells

1. Heat the oil in a large kettle or Dutch oven and saute the onions and garlic until limp. Push to one side.

2. In the same kettle, saute the rice until lightly browned.

3. Dissolve the saffron in the hot chicken broth. Add to the rice mixture.

4. Add the bacon strips, tomatoes, pimientos, bell pepper, fish, shrimp, and seasonings. Mix well.

5. Cover, bring to a boil, reduce heat, and simmer for 20 minutes.

6. In the meantime, thoroughly rinse and scrub the clams and, in a separate saucepan, steam them until their shells have popped open.

7. Remove clams and arrange them with the raw shrimp around the rice.

8. Place chicken breasts on top of rice. Cover and again simmer for about 20 minutes or until shrimp are done.

Makes 6 servings.

Here are some variations on this popular Spanish recipe. Feel free to experiment with your own ingredients:

1. Substitute for bacon: four pork sausage links, sliced, or two 4-inch sausage links, skinned and crumbled

2. For variety, add one or more of the following ingredients during the last 10 minutes of cooking:
  • 1 package frozen peas
  • 1 package frozen green beans
  • 1 can artichoke hearts, rinsed and drained
